Well, the cold with which I was stricken for the weekend appears to be on its slow way out. I can almost smell again, which means I could almost taste my lunch of leftover veggie quiche. I have discovered that quiche is an excellent way to get rid of vegetables that you otherwise would not have much use for. Specifically, summer squash. I don't mind summer squash, per se, but don't have very many uses for it. Add some spinach, red pepper, and eggs, though, and there you have it. Throw some cool whip, strawberries, and angel food cake together after that, and voila.

Summer squash is excellent when lightly sauteed in extra virgin olive oil with some finely diced garlic and shallots -- add some freshly course-chopped rosemary or some finely ground dried rosemary and suddenly it's almost as if you're in France! It makes a wonderful side dish for just about any meal. It is also tasty raw, neatly chopped and served on a salad (or even in a pasta salad). Yum summer squash.
